Besunami's Chocolate-Chocolate-Chip Cookies

Ingredients:

2 C. sifted flour
1½ C. sugar
½ C. unsweetened cocoa
½ tsp. salt
1 tsp. baking soda
2 tsp. vanilla
1 tsp. cold water
2/3 C. dairy-free margarine or butter substitute, softened (I recommend Earth Balance)
2 Tbsp. ground flaxseed, beaten into 6 Tbsp. warm water
½ package vegan chocolate chips

Combine ingredients in order listed, dry ingredients first. Drop onto ungreased cookie sheet with spoon. Bake at 375°F for 12 minutes.

Yield: approximately 3 dozen



Chinese Chicken Salad

Chinese Chicken Salad is one of my favorite recipies! Two of the ingredients are very important: you will need a good friend to prepare the dish with and a Chinese Chicken Salad Movie to watch. A Chinese Chicken Salad Movie is a film that can be viewed with sarcastic commentary, Mystery Science Theater style, and preferably contains vampires, martial arts, wacky evil geniuses, or all of the above. An example of a classic Chinese Chicken Salad movie is "Big Trouble in Little China".

Ingredients:

1 good friend and co-chef
1 Chinese Chicken Salad Movie

1-2 heads romaine lettuce
As many chicken tenders as you want!
4 green onions, sliced
2 Tbsp sesame, toasted
2 Tbsp slivered almonds
½ package chinese noodles
3 Tbsp sugar
1 tsp salt
1 tsp pepper
6 Tbsp red wine vinegar
½ Cup oil
¼ tsp minced garlic

Broil chicken tenders and place on plate in refrigerator to cool. Combine all ingredients in second column to make dressing. Place in freezer. Rinse lettuce and tear into large salad bowl. Add all other ingredients and toss. Eat immediately while watching movie and making pithy comments. Best while fresh and the noodles are crunchy!

Serves: 2



Great Gramma Hays's Bubble Cake

Ingredients:

1 C. sugar
2 C. unpeeled, thinly sliced apples
½ C. sifted flour
1 tsp. baking soda
½ tsp. salt
½ C. vegetable oil
1 egg, beaten
1 tsp. vanilla
½ C. nuts (optional)
½ C. blueberries or cranberries (optional)

Mix apples and sugar, let stand until juice forms. Sift flour, soda, and salt together and mix into apples. Add remaining ingredients and mix thouroughly. Pout into greased, floured 8x8" pan. Bake at 350°F for 40-45 minutes. Allow to cool and frost lightly or not at all.



Sweet Vegan Biscuits

Ingredients:

3 C. flour
1¼ tsp. baking soda
1¼ tsp. cream of tartar
¾ C. dairy-free margarine or butter substitute, softened (I recommend Earth Balance)
¾ - 1 C. water

Blend flour, soda, and cream of tartar. Cut in margarine until the mixture resembles fine cornmeal. Add enough water to form dough, but not so much that the dough becomes sticky. Put on floured countertop or table, knead a little, shape, cut, and bake on an ungreased cookie sheet at 375°F 15-20 minutes.
